Pamper your loved ones with sweet and savory brunch casseroles,
handcrafted Valentine boxes, heart-shaped rolls and more
LUVERNE, Ala. – Even cash-strapped cupids can craft a special Valentine's Day celebration with a little creativity, says Patricia "Sister Schubert" Barnes, founder of Sister Schubert's Homemade Rolls. The busy working mother and cookbook author shares tips for low-cost family activities as well as quick and easy recipes on her new Web site, www.sisterschuberts.com.
"In tough economic times, love and companionship take on even greater meaning," said Ms. Barnes. "And there's no better way to show you care than with a homemade meal or handcrafted gift."
Family Valentine's Day celebrations are a tradition in Ms. Barnes' family. "My parents were married on Valentine's Day and always included my siblings and me in their anniversary celebrations," she said. "One way I continue the tradition is to make handcrafted Valentine boxes with my grandchildren. We have such a good time cutting out hearts and gluing them to boxes for the children to keep their Valentines in."
For a special start to the day, Ms. Barnes suggests preparing brunch with a sweet bread pudding or savory breakfast casserole. Recipes are included below.

Sister's Cinnamon Bread Pudding
1 package Sister Schubert's Cinnamon Rolls, thawed
8 egg yolks
2 eggs
1quart heavy cream
1cup sugar
Pinch of salt
2 tablespoons butter, cut into small cubes
1 cup pecans, coarsely chopped
½ cup golden raisins
1 teaspoon bourbon or vanilla extract
Preheat oven to 325 degrees. Butter a medium casserole well.
Remove rolls from package, cut each roll into quarters and set aside. Using a large mixing bowl, whisk eggs with egg yolks until light and fluffy. Add cream, sugar and salt, whisking to combine thoroughly. Flavor custard with a teaspoon of bourbon or vanilla extract. Place rolls into prepared casserole and pour custard over. Dot casserole with butter and sprinkle with pecans and raisins. Bake until pudding is golden and center is set, approximately 30-40 minutes. Allow pudding to stand for 5 minutes before serving. Serves 6
Sister says: There's no need for bourbon sauce because the flavor's baked inside. The alcohol cooks out during baking, but if you prefer, substitute vanilla for bourbon.
Sausage Roll Breakfast Casserole
1 package Sister Schubert's Sausage Rolls, thawed
8 large eggs
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons Worcestershire sauce
4 cups half and half
Dash hot pepper sauce
2 cups sharp cheddar cheese, grated
Butter well a 9 X 13 casserole dish.
Remove rolls from pan and slice each roll into thirds, cutting across sausage. Using a large mixing bowl, whisk eggs until light and frothy. Add mustard, salt, pepper, Worcestershire sauce and half and half, whisking until ingredients are well combined. Flavor with a dash of hot pepper sauce. Place sliced rolls into prepared casserole. Sprinkle with grated cheese and pour egg mixture over cheese. Cover tightly and chill 4 to 24 hours.
Preheat oven to 325 degrees. Bake casserole until center is set, approximately 50-55 minutes. Let stand 5 minutes before serving. Serves 8.
